The vineyard strip that made Burgundy famous is barely two kilometres wide. From Dijon it runs south in a thin seam along the limestone escarpment of the Côte d'Or, and every celebrated name on the Route des Grands Crus sits on that narrow band. Geology, not scale, is the region's currency.
Monks did the surveying. Cistercians from Cîteaux, founded in 1098, and Benedictines from Cluny spent centuries walking these slopes, tasting fruit plot by plot, marking where the soil turned from marl to hard limestone. Their boundaries hardened into the climat system: more than 1,200 named parcels, each with its own registered identity. In 2015 UNESCO inscribed the Climats of Burgundy on the World Heritage list, an unusual case of a landscape protected for its property lines as much as its beauty. Dijon itself was the ducal capital, and the Palais des Ducs still anchors the old town. The city's wine identity is younger than its political one. South of the ramparts, the pattern repeats. Gevrey-Chambertin, Vougeot with its sixteenth-century Château du Clos de Vougeot, Nuits-Saint-Georges, then the softer Côte de Beaune where Chardonnay takes over from Pinot Noir. Cellars here are cut into rock, held near 12°C year-round, stacked with barrels of Allier and Tronçais oak. The two grapes account for the overwhelming majority of plantings; Aligoté and Gamay survive at the margins.
Cheese follows the same logic of place. Époisses, washed in marc de Bourgogne, and Cîteaux, still made by monks, are local products of the same monastic inheritance.
